Head Chef, Gordon Clark
We are delighted to announce the appointment of Gordon Clark, as new Head Chef for The Fox. The appointment heralds a new culinary chapter at our pub restaurant, which was the first to bring gastro pub culture to Hertfordshire over 25 years ago.
Gordon takes the helm of culinary strategy at The Fox covering the bar, conservatory, gardens, barn and main restaurant. His signature dish, and favourite ingredient is venison loin, which he chooses to serve with fried sprouts, a kohlrabi remoulade and blackberry gastrique. The inspiration for this dish explains why Gordon is a perfect match for his new home at The Fox, which has a long heritage in local, seasonal and sustainable produce. When asked what he thought the future of food was for the restaurant he simply answered, “using fresh, local, seasonal produce, using it well, and using it completely”. He couldn’t have described the culinary DNA any better. Here’s to Gordon and the new culinary chapter at The Fox.

Sustainability at The Fox, Willian
At The Fox, sustainability isn’t just a goal – it’s at the heart of everything we do. From sourcing local ingredients for our Michelin Guide-recognised kitchen to making thoughtful changes across our business, we’re always working to be kinder to the planet.
Our kitchen is deeply committed to local sourcing, ensuring that our ingredients are fresh, seasonal, and ethically sourced. We partner with trusted family businesses such as Priors Hall Farm in Essex, Staithe Smokehouse, and Stagenhoe Estate for venison. Additionally, we collaborate with nearby farmers, gamekeepers, and North Norfolk fishermen, supporting our local community and reducing food miles.
As members of The Sustainable Restaurant Association, we’re proud to take meaningful steps to minimise our environmental footprint. Sustainability is an ongoing journey for us, and we’re always looking for new ways to improve and make a positive difference.
